MAPLE "BACON" PARFAIT

MAPLE CRUMBLE

INGREDIENTS

2 CUPS GLUTEN FREE OATS

1 CUP RAW ALMONDS, GROUND

1/4 CUP COCONUT OIL, MELTED

1/4 CUP MAPLE SYRUP

1 TEASPOON VANILLA

1 TEASPOON CINNAMON

1/4 TEASPOON SALT

DIRECTIONS

1) PREHEAT OVEN TO 300 DEGREES

2) MIX DRY INGREDIENTS IN LARGE BOWL

3) ADD WET INGREDIENTS.  MIX UNTIL FULLY INCORPORATED.

4) BAKE FOR 10 MINUTES.  ROTATE PAN AND BAKE FOR 5 MORE MINUTES OR UNTIL GOLDEN BROWN.

5) LET COOL

 

COCONUT CASHEW CREAM

INGREDIENTS

2 CUPS COCONUT CREAM

2 CUPS CASHEWS, SOAKED

1/4 CUP COCONUT OIL

1/8 CUP MAPLE SYRUP

DIRECTIONS

1)  BLEND ALL INGREDIENTS IN VITAMIX UNTIL SMOOTH

2) LET SET IN REFRIGERATOR FOR 4 HOURS+ (FOR BEST RESULTS, LET SET OVERNIGHT)

 

COCONUT "BACON"

INGREDIENTS

1 CUP LARGE COCONUT FLAKES

1 TABLESPOONS COCONUT OIL, MELTED

1 TEASPOON SMOKED SALT

DIRECTIONS

1) PREHEAT OVEN TO 300 DEGREES

2) TOSS COCONUT WITH MELTED COCONUT OIL 

3) SPRINKLE COCONUT WITH SALT

4)  BAKE FOR 5 MINUTES.  ROTATE PAN AND BAKE FOR 5 MORE MINUTES OR UNTIL GOLDEN BROWN.

5) LET COOL

TO ASSEMBLE

I LIKE TO USE 8-OUNCE MASON JARS BUT FEEL FREE TO USE WHATEVER YOU HAVE ON HAND.  LAYER THE THREE COMPONENTS IN THE FOLLOWING ORDER: MAPLE CRUMBLE, COCONUT "BACON, COCONUT CASHEW CREAM.  CONTINUE LAYERING UNTIL JAR IS FULL.  DRIZZLE WITH MAPLE SYRUP AND ENJOY!

1/4 CUP COCONUT OIL                                                                                             1/4 CUP APPLE CIDER VINEGAR
1 TABLESPOON SALT                                                                                                 FRESH HERBS
DIRECTIONS
1) PLACE ALL INGREDIENTS IN BLENDER. BLEND UNTIL SUPER SMOOTH.
2) POUR INTO BOWL AND PLACE IN REFRIGERATOR UNTIL FIRM.
3) FORM INTO DESIRED MOLD AND ROLL WITH FRESHLY CUT HERBS.                                  4) STORE IN REFRIGERATOR UNTIL READY TO SERVE.

 

DANDY SPRITZER RECIPE
INGREDIENTS
1 BOTTLE BUBBLY WATER
1 HANDFUL DANDELION
1 TABELSPOON LIQUID SWEETNER
JUICE OF 2 LEMONS
JUICE OF 2 LIMES
1 TABLESPOON LIME ZEST
DIRECTIONS
1) PLACE ALL INGREDIENTS, EXCEPT BUBBLY WATER, IN BLENDER.
2) STRAIN USING A FINE MESH STRAINER. DISCARD PULP.
3) CHILL UNTIL READY TO SERVE.
TO SERVE
1) MIX 1 PART DANDELION WITH 4 PARTS BUBBLY WATER.                                                2) SERVE IN SUGAR RIMMED GLASS.
